Aubergine lasagna

Last night I made a delicious aubergine lasagna for dinner. It was yummie!
I did however leave it in the oven for a few minutes too long so it looked a bit black but it did not effect the taste.
 
It was so easy and quick to make as well to make enough for 4 people (or 3 big eaters) you need 2 aubergines, 500g of lean minced beef, 1 can of chopped tomatoes, 1 onion, 2 garlic cloves, mushrooms, dried oregano, paprika, chilli powder, salt and pepper.
 
Start with frying the aubergine slices in some oil, salt and pepper. When brown remove from frying pan. Then add onion, garlic and mushrooms to the frying pan once soft add the mince beef and when that is done add the spices and chopped tomatoes. Let it simmer for a bit before you put layers of aubergine and beef in a oven form.
Sprinkle some grated mozzarella cheese on top and leave in the oven for 10-15 minutes.
 
It's kind of healthy and really really tasty!
